Just curious how others use up zucchini, which I know tends to be very, very prolific.

I have found that grating it and adding it to baked goods (muffins and cakes) makes them super moist. I got a rare compliment out of dh the first time I added zucchini to his breakfast muffins, and that's really saying something.

I also grate it into spaghetti sauce. Made the sauce a little chunkier but my kids didn't know they were eating green veggies on their pasta.

I love to stuff zucchini. Here are some things I do:

--Zucchini lasagna (slice it longways and use it instead of lasagna noodles)
--Slice longways, hollow out middle, stuff with hamburger meat, spaghetti sauce, parmesan cheese, bake for about 20 minutes at 400 degrees.
--Slice longways, cut into halves (depending on how big the zucchini is). Make a mixture of cream cheese, garlic, parmesan cheese. Fill zucchini, drizzle with olive oil, bake at 400 for 20 minutes. This is an awesome side dish
--Cut it up and simmer it in chili
--Cut it up and put it in spaghetti
--Slice it, drizzle with olive oil or butter, salt and pepper, slice a little onion in with it and roast it for 2 minutes at 400 degrees
--Slice it and saute it with soy sauce, butter, black pepper
--Stir fry
--My mom slices it longways and makes pizza on top of it

We had it grilled the other day and it was excellent. We don't normally like zucchini but both dh and I ate this up.

I sliced it thick. I tossed it with olive oil and a few sprigs of fresh basil and oregano. Grilled it 5 minutes on one side and 4 on the other. Salt with sea salt.

That was so good.

Dh has also made a special pasta with sauted zucchini, olive oil, salt, pasta, and a tiny bit of leftover pesto. Yum!

I believe you can also roast it but haven't tried that yet.

The other night, I sauteed some zucchini in a little olive oil with a few slices of onion and a clove of garlic (used garlic press).

It was delicious.

Cut into sticks, bread them, deep fry, and serve with marinara.

Slice thinly lengthwise, bread, fry, stack in a baking dish, cover with tomato sauce and mozzarella cheese and bake until all bubbly and oozy like you would with eggplant. Then make messy sammiches!!

I like it roasted. I use zucchini, yellow squash, portabello (sp!) muchrooms, red onion and green, red and yellow pepers, a little olive oil mixed with basil, pepper and season salt and bake at 425 * for about 10 minutes. Yummy. I also re-use them by cubing chicken breasts and browning/stir-frying them in a fry pan and then add the veggies to just heat through. Makes a very good dinner done over rice.

Of course, the bread, muffins, give to friends, give to neighbors, give to... ya, you got it, just give it away!

Ah, zucchini. The reason that people in safe rural areas lock their cars in August. Not because they're worried that anything will be stolen, but they are afraid they will find their car full of zucchini when they return.

This sounds odd I know, but we always had so much zucchini growing up that my mom found a recipe to make pie using zucchini. It tastes JUST like apple pie.

The secret is the fact that the lemon juice adds that touch of tart and the texture is just like an apple. You seriously can't tell the difference, especially if after you remove the seeds you cut the zucchini by paring off apple-shaped slices.

I cry when the heat kills all my zucchini plants.

But as far as how I cook it, I roast, grill, or stuff and bake them. Stuffing the big ones is a good way to use them up. Cooked ground meat and rice go in the halves which have been scooped of seeds, and then top it all with a bit of cheese and bake.

I slice them thin lengthwise, toss in olive oil & balsamic vinegar, then grill. Yumm. Grill along with some onions, peppers, squash, mushrooms, etc, and you've got yourself the makings of a really great grilled veggie sandwich.

You can do a lot with zucchini as the others have indicated. I usually cut them up and saute in olive oil, onions, garlic and tomatoes. A very healthy side dish and sometimes I serve it over rice.

They make a fabulous Zucchini in the oven while topping them with au gratin!

Also you can add them to your tomato stews and soups.

i add zucchini to everything! Spaghetti sauce, lasagna, casseroles, stir fry. I like them roasted too. They are good because they don't really have a taste so the kids will eat them and not know!

My favorite way is to cut them in half, S&P them, and place them on a smoking grill. I do indirect high heat for about 30 minutes, so it works out perfectly with boneless meat.

My son is only 16 months, and he adores zucchini, prepared just the way HisCovenant (Zippy) described. dH always throws on some zucchini whenever he grills.

We usually slice them, boil them just until tender, and serve with butter and salt.

I took all of our excess zucchinni and sliced it, blanched it for three minutes, packed them in quart sized freezer bags and put them in the deep freeze.

Dip them in egg yolk then in bread crumbs then deep fry them and serve with ranch. Only way my 2 year old will eat it.

Has anyone mentioned stewing them in tomatoes with onions and italian seasoning? I haven't done that in forever, but recall loving the canned version as a child.

I pan fry them in whole wheat flour. It's courser than white flour, so it has a closer texture to cornmeal.

Cut the zuc in to either rounds or half rounds, s&p them, and stir (if in large bowl) or shake (if in a bag) in the whole wheat flour. The salt causes the zuc to release water so that the flour sticks. Then pan fry them in EVOO just like you would do yellow squash or okra. You can also pan fry/bake & stir them in the oven like we do in the south for okra, or just lay them in a flat layer and bake- turning at the half cook time. What matters is that the oil penetrates the flour and they cook until brown, however the cooking is accomplished!

Zucchini chili and zucchini-chocolate chip bread are our favorites. I also shred it and add it to any sauce. Fried with seasoning salt is yummy too, but probably not the healthiest of those ideas.
